Then there's baking!!

I knew that at sometime, with my family members picking the numbers that would lead me to the next recipe, that I would have to do some type of baking from the Country Women's Association cookbook.
My three year old picked the next recipe and it landed on Ginger Crispies which got the boys excited when they realised that they were to be rolled in cornflakes. I definitely recommend that you use preserved ginger in the recipe as I used normal ginger and it was a bit strong for the flavour.
The method of creaming together the butter and sugar was something I hadn't done since high school Home Science, so it was a good workout for the biceps I think, but between my three year old's attempts and my own we seemed to have made a good job of it. Yep, we did it by hand..getting authentic here.
This is definitely a good recipe for the little ones to help with. Details are below:
Ingredients
1/4 lb (125g) butter
1/4 lb (125g) sugar
1 egg, well beaten
1/2 lb (250g) sifted self-raising flour
1 C chopped, preserved ginger
Method
1. Cream together butter and sugar and add egg.
2. Add sifted SR flour and ginger.
3. Form mixture into small balls and roll in corn flakes.
4. Bake in medium oven for 15 minutes or until cooked.

I've got poached nectarines in the freezer and two very ripe banana. If I don't tell husband and son about the nectarines, and just call them banana muffins, I think I'll get away with it!
