Spiced Apple Cake!

My young son has struck again in the kitchen. He loves cooking with mummy and insisted that we bake a cake.
I discovered this simple recipe in one of my 'not so vintage' recipe books, but to him it would have been considered so. Plus we had all the ingredients, so it was definitely a goer. As you can see my son added his own creative signature to the final result.
It was very delicious and the kids (including my older son when he got home from school) were happy to devour it for afternoon tea.
Ingredients
2 apples, peeled, cored and sliced
3/4 cup water
125g (4oz) butter
1 cup raw sugar
2 eggs
1 cup plain flour
1 cup SR flour
1/2 tsp bicarbonate of soda
1 tsp mixed spice
sifted icing sugar for decoration
lollies for facial features if so required.
Method
1.Grease and line a 23cm (9in) round cake pan (we used a loveheart shaped one)
2. Cook apples in water until tender, remove from heat, puree or sieve until smooth, cool.
3. Cream butter and sugar in small bowl with electric mixer until light and fluffy. Add eggs, beat until combined.
4. Add half the sifted dry ingredients and half the apple mixture, beat on very low speed until just combined. Add remaining dry ingredients and apple mixture, beat until combined.
5. Spread mixture evenly into prepared pan. Bake in moderate oven for 40 mins or until golden brown (I found leaving it in the oven for a further 5 mins with oven turned off was just right.)
6. Turn onto wire racks to cool. Dust with icing sugar and decorate according to your children's wishes!!!

It looks lovely. And I think I'm going to have to try out that recipe.
Guess what my kids did the other day? They cooked a cake from scratch without a recipe. I was so proud of them. All I did was melt the butter and supervise as they put it in and took it out the oven. Other than that, I gave no instructions at all. And it turned out pretty good too. Not the best cake I've ever eaten. But all in all, a very good try.
