Poached Eggs and Creamed Spinach

One of the fun ways I get my family involved in this cooking journey of mine is to ask them to give me a number. Whatever number they pick will be the page that I find my next recipe...I'm still hoping no-one lands on 'Breakfast Dish with Tripe'!!!
Anyway, I asked hubby for a number and he gave me his age...which is 42....and the title of this post was the next recipe. He was excited as in reality it was just a different form of bacon and eggs. I have never creamed any type of vegetable in my life and was pleasantly surprised at how easy it was.
My six year old son ate the meal with gusto as God has blessed me with one child that eats all his greens (AND enjoys them) and also loves eggs. I wish I could say the same about my three year old!! He nibbled on the toast, ate all the bacon and looked disapprovingly at the spinach and egg. Oh well, they all agreed it was a tasty meal.
Here are the details for the recipe:
Ingredients
2 lbs (@ 1kg) spinach
1/4 pint (150ml) cream or evaporated milk
salt and pepper
2 oz (60g) bacon
mini-skewers (soaked in water)
4 slices bread
4 eggs
chopped parsley
Method
1. Cook, drain and sieve the spinach.
2. Add the cream/milk and seasoning and keep hot.
3. Cut the bacon into neat lengths, roll up, skewer and grill.
4. Toast the bread and keep hot.
5. Poach the eggs and place on the toast.
6. Arrange the spinach around the eggs, sprinkle with parsley and garnish with bacon rolls.
