cordial from scratch
Long before Cottees and Golden Circle were in the market, when homes often had an abundance of fruit from all the citrus trees on their quarter acre blocks, mums made cordial for their thirsty families.
That was a time when mothers knew the amount of sugar that went into the drinks and preservatives weren't needed as the drinks were made fresh and usually drunk the same day. That was when we had time.
Lemonade stands also helped kids understand the value of earning a little extra pocket money.
The following recipe is from 1954 in the Cairns Post, where humidity was a big incentive for refreshing drinks. All measurements are imperial.
50-50- Fruit Cordial
Ingredients
4.5 lb sugar
3 pints boiling water
3 oranges
3 lemons
1/2 oz citric acid
1 oz tartaric acid
1 pkt epsom salts
Method
1. Place sugar, acid and salts in a large bowl
2. Pour boiling water over and stir well.
3. Grate rind of oranges and lemons finely and extract all juice.
4. Add rind and juice to other ingredients and mix well.
5. Bottle when cool.
6. Put some in a glass and fill with iced water. It is also good with mineral water.
