While tortillas have been around for centuries and come from the Spanish world 'torta' which means round cake, they were originally made by the Aztecs.
The South American Indians would ground corn into cornmeal which was also called masa.
This would then be shaped into a ball and flattened into a round pancake. From there they were placed on a hot griddle and cooked quickly.
Modern day tortillas aren't made too differently from the past, although many of the fillings and flavours may have changed.
Tortillas are used in enchiladas, for tacos, burritos and in quesadillas. You can even make tortilla chips.
Below is a simple recipe to make your own.
Sift three cups of plain flour and one teaspoon of salt into a large bowl.
Make a well in the centre, add a third of a cup of oil, and a cup of warm water. Mix with a flat bladed knife until a soft dough forms.
Knead on floured board for five minutes until smooth.
Put in a clean bowl, cover and stand in a warm place for an hour.
Divide the dough into 12 pieces and roll each out into a 20cm (roughly) circle. Heat frypan over medium heat and cook tortilla for one minute each side, pushing down gently if it puffs up a bit. Stack on a plate and serve with whatever filling you have to hand.
